Why we show what has run out

Saying "there is none left" loses one sale today and wins ten afterwards.

A bakery website usually shows everything it can make. Ours will also show what is gone, this morning, in this shop.

The arithmetic

Someone who comes up for a tart and leaves empty-handed does not come back next week. Someone who reads "sold out — back at 9:30" comes back at 9:30.

What it takes

That the shop keeps it up to date. It is one more gesture in a day that already has many, and it is the only reason few houses do it.
