We know the fields, we know the years — and a bad year is tasted before it is measured.
Flour is not a neutral ingredient. It changes from harvest to harvest, and a bakehouse that does not know this makes the same bread all year without understanding why it varies.
Why so close
Sixty kilometres is not a green posture — it is a matter of knowledge. At that distance you visit, you see the fields, you talk to the miller before the harvest.
A bad year is tasted
A wet summer gives weaker wheat, a dough that holds less well, a tighter crumb. You feel it while mixing, before you measure it.
